Despite exercise and outdoor life, the texture of its meat is so tender that you could cut it with a spoon. To preserve its soft flavor and balanced nuances, we do not apply maturation.

Animals worthy of a National Geographic documentary that live peacefully. Their activity and diet based on forage give their meat a tender texture and an intense, clean flavor, which intensifies after a brief maturation of 15/20 days.

Good flavor is in the mix. This cross between Aberdeen Angus and native American breeds provides genetics with a very high degree of marbling (infiltrated fat). Superior raw material to which we apply the master touch: vacuum maturation to perfect texture, flavor, and nuances.

Of all the excellent cattle breeders we work with, Luismi Garayar, a star butcher, selects the optimal pieces for us as if it were a repertoire of successes. To do this, he considers the infiltrated fat, age, muscular texture, and a few other secrets. 

The mountain trembles at the passage of this bovine beauty. They enjoy the wild life and withstand the harsh climatic conditions by moving slowly, aware of their strength. Such a character requires a similar maturation — long and controlled, lasting over a hundred days, which transforms their muscular hardness into prodigious flavor.
