Product offering

We’re referring to the intramuscular fat that can be seen in red meats. These are the small white or yellowish veins that can be seen. Their appearance is similar to the bacon we find in Iberian hams. It’s usually an indicator that the product is tasty and tender, and that the animal has been raised free-range, mature, and its meat is of high quality.

Unlike extramuscular fat, intramuscular fat usually melts once cooked, giving the meat succulence and a rich flavor. In certain products, such as Kobe Wagyu, its classification is based on its degree of marbling. The higher the grade, the higher the value.

There may be products with a low degree of marbling, but with high quality, given that the age of the animal also influences this.

Organic livestock farming is a breeding model that provides more comfortable living conditions for the herd, respecting their biological and behavioral needs. We find ourselves with happy animals that have grown up with excellent feeding, housing, and rearing conditions. They are also raised without the use of any synthetic chemicals.

 

It is not entirely true that products with an organic certificate are necessarily of better quality than others. We can also find top-quality meats without an organic certificate where the animals’ needs have been respected throughout their breeding and which are very tasty and nutritious on the plate.

It all depends on the result you’re looking for, but at Sanmartí 1850, we have products for all palates, needs, and budgets.

If you’re committed to consuming products that are 100% free of unnatural chemicals and have been raised free range, don’t hesitate and choose organic products (such as Campdevànol Pirinat beef, chicken from the Berguedà cooperative, or chicken from Charco de Moià).

If you’re looking for a product with a reasonable and affordable price-performance ratio, we recommend choosing traditional products. You’ll enjoy quality at a very affordable price, like our free-range chicken, fed on grains, wheat, and oats for a minimum of 75 days.

If you’re looking for a product raised in semi-free range and with a very careful diet, but don’t want to pay extra for the organic seal, stick with the farm products we offer (such as Can Rovira chicken from Els Casals, Mas Avícola de Campo chicken, or Moixina beef from Girona).

They are all completely different products. But what differentiates them?

 

Veal is a cow or bull that has been cut before reaching 12 months of age. Its meat is pink, soft on the palate, and has a very tender texture.

 

Lamb is a veal that has been cut for over 12 months. It has certain similarities to beef, such as its infiltrated fat, but with a more tender texture and pink color.

 

A cow is a female that is over 48 months old and is capable of producing milk. Its meat is reddish with infiltrated fat, a yellowish color. It has a more intense flavor than veal, but is balanced.

 

A bull is a male that is over 48 months old and is usually raised as a stud. It is quite difficult to find bull meat for consumption (unless you live in regions with a bullfighting tradition), as very few are slaughtered. Its meat is red in color and intensely flavorful.

 

The ox is a castrated male over 48 months old, which was formerly used as a work animal. Its meat is very red and fine and elegant on the palate. Its fat has a pearly hue and is not yellowish like that of a cow. These cuts are extremely difficult to find and their price is very high.

At Sanmartí 1850, we value all our products very highly, and therefore, we don’t use euphemisms and call them just what they are.

For meat to be red, it needs a minimum amount of rest and the animal must be mature. Furthermore, if eaten fresh, its texture is dry and tough; butchers typically apply a curing process, which darkens its color and enriches its flavor nuances.

Therefore, a compromise must be found. The curing time depends on the age of the animal and the type of cut. For example, we cure veal for 5 to 7 days, but, on the other hand, we can let the largest entrecotes mature for up to 30 days to achieve a unique texture and aroma.

Wa-gyu literally translates as “Japanese cow,” and the most commonly used breed is the Tajima-ushi. It holds the title of being the best beef in the world, specifically that from Kobe, a Japanese port city. Its unique feature is that it is raised following a traditional method focused 100% on animal welfare. For example, Wagyu Kobe animals are pampered with daily massages and their diet includes beer.

We work with the main breeds and different Japanese origins, such as Kobe, Kagoshima, Gunma, and Ito, but also with lesser-known ones, such as Hida, always with the relevant documentation and controlled traceability.

This process gives the beef the highest level of marbling (ample infiltrated fat) known, which gives it a flavor and texture unique in the world, making it soft, flavorful, and delicate in the mouth.

Since 2028, we have been official members of the Kobe Beef Marketing & Distribution Promotion Association, making us the first butcher shop in Spain to join this select club, which legitimizes us to sell this type of meat with the corresponding certification of authenticity.

In our store, both physical and online, we only select pieces that meet the optimal aging and ripening characteristics for their category.

We’d love to have you visit us. We offer a Click & Collect service so you can conveniently place your order through the online store and pick it up at our store. We’ll let you know via WhatsApp when the product is ready.

To maintain health and safety and guarantee the highest quality of our products, we use a temperature-controlled chain to keep them fresh and in good condition during transport. Our insulated boxes are double-walled, and we also use ice packs. They meet all thermal and leak-proof requirements. For example, they are used to transport medical supplies.

You’ll receive an SMS message with a tracking link 24 hours before your delivery is scheduled. On the day of delivery, you’ll be able to track the progress of your delivery live once it leaves the warehouse.

Monday to Thursday we’re open from 8 a.m. to 2 p.m. and from 5 p.m. to 8:30 p.m. Friday from 8 a.m. to 8 p.m., Saturday from 8 a.m. to 2 p.m., and Sunday we’re closed.

Gift card

We offer gift cards that you can purchase at our stand at the Sabadell Central Market or in our online store. They’re virtual wallet-style, and you can load any amount you want.

They can be redeemed for our products both in our physical store and online. You just need to use the gift card when you pay.
